Today, I invite you on a journey of reflection and indulgence as we explore the profound wisdom hidden within a seemingly humble recipe – the mango pie.

Mango Pie Recipe - A Slice of Life's Sweetness

Ingredients
  

  • 2 cup Plain flour
  • 1/2 cup Unsalted butter
  • A pinch of Salt
  • 2-3 tablespoon Cold water
  • 3 pcs Ripe Mangoes (peeled and sliced)
  • 1/2 cup Granulated sugar
  • 1 teaspoon Cornstarch
  • 1 teaspoon Lemon juice
  • A sprinkle of cinnamon (optional)
  • Whipped cream or ice cream for serving

Instructions
 

For the Crust:

  • In a mixing bowl, combine the plain flour, a pinch of salt, and the unsalted butter. Rub the butter into the flour until the mixture resembles breadcrumbs.
  • Gradually add the cold water and mix until the dough comes together. Form it into a ball, wrap it in cling film, and refrigerate for 30 minutes.
  • Preheat your oven to 180°C (350°F).

For the Filling:

  • In a saucepan, combine the sliced mangoes, granulated sugar, cornstarch, and lemon juice. Cook over medium heat, stirring gently until the mixture thickens and the mangoes become soft and caramelised. Add a sprinkle of cinnamon for extra flavour if desired.

Assembling the Pie:

  • Roll out the chilled dough on a floured surface to fit your pie dish. Place it in the dish and trim any excess dough hanging over the edges.
  • Pour the mango filling into the crust, spreading it evenly.
  • You can use the remaining dough to create a lattice or another decorative pattern on top of the pie.

Baking:

  • Bake in the preheated oven for approximately 30-35 minutes or until the crust is golden brown.

Serving:

  • Allow the pie to cool slightly before serving. Serve warm with a dollop of whipped cream or a scoop of ice cream for an extra indulgence.
