When I’m cooking, my mind wanders to a zillion places, not from worry but because of curiosity. While dehydrating lemons, I had this idea: What if I added lemon thyme to white chocolate? Yum! And so came the White Chocolate Lemon Thyme Rocky Road.
Of course, it needs to taste great and look FANCY at the same time. There really is no recipe required to make the BEST EVER Rocky Road, so you can go to town with all your favourites. (Shhh. My next creation will be with liquorice all sorts.
Lemon Thyme Rocky Road
Lemon Thyme Rocky Road is a scrumptious marriage between rich white chocolate, lemon thyme, and nuts. It’s sure to jazz up any event.
Ingredients
- 1 pack Marshmallows
- White chocolate
- Macadamia Nuts
- Shredded Coconut
- Lemon Thyme
- Lemon Zest
Instructions
- Melt the chocolate.
- While waiting for it to melt, line your slice or cake tin with baking paper.
- Mix all your dry ingredients and place in the prepared tin.
- Once the chocolate has melted, pour over the dry ingredients.
- You can do what I do and keep some ingredients exposed, like the delicious marshmallows or macadamia nuts. (I am a little fussy like that. Let’s face it: we’re making art!)
